Chocolate-Covered Strawberry Bark
Ingredients:
16 oz strawberries sliced
1.5 cups creamy peanut butter
12 oz semi-sweet chocolate chips
2 tsp salt flakes OPTIONAL
Instructions:
Lay a sheet of parchment paper onto a rimmed baking sheet
Rinse strawberries, remove stems and slice strawberries
Lay out strawberry slices into a rectangle on prepared baking sheet.
In a medium bowl, melt 1.5 cup peanut butter in the microwave. Microwave for 20 seconds in a microwave safe bowl and stir. Microwave another 20 seconds until melted and runny.
Pour peanut butter over strawberry slices and spread evenly. You can use a knife or an offset spatula if you have one.
Place baking sheet in the freezer
Place bag of chocolate chips in a microwave safe bowl and microwave for 30 second intervals – stir and microwave again until melted. Approx 1-1.5 minutes.
Remove baking sheet from freezers. Pour and spread chocolate over peanut butter.
OPTIONAL: sprinkle with flaky salt
Place baking sheet back in the freezer for 1 hour.
Remove baking sheet and, using a sharp knife or pizza cutter, cut bark into pieces. Lift pieces with a firm spatula and place 2-3 pieces in smaller bags and then place bags in a larger freezer bag.
Remove pieces as desired, leave out for 2-3 minutes before eating.
